Tea Sandwiches


These sandwiches have been inspired by Chef James Beard's onion sandwiches.  According to wiki, James Andrew Beard  was an American chef and food writer. The central figure in the story of the establishment of a gourmet American food identity, Beard was an eccentric personality who brought French cooking to the American middle and upper classes in the 1950s. His legacy lives on in twenty books, numerous writings, his own foundation, and his foundation's annual Beard awards in various culinary genres.  

These tea sandwiches are quite unique in it's combination of ingredients, as well as appearance.  The combination of white onion and parsley tastes quite interesting.   Will be gone in no time!  The simplicity of these, contrasting with the style will make it one of your cocktail party favorites

Recipe:

Bread - 6 slices (try using crusty bread if possible)
Vegan Mayonnaise - 3 tablespoons
Amul butter (optional) - 1 tablespoon
Cream cheese (optional) - 1 tablespoon 
Salt - to taste
White onion - 1/4 - 1/2. very thinly sliced
  • Cut the bread into rounds using a cookie cutter, or some such.
  • I used 3 different versions of spreads, on each of the sandwiches.  You can choose to use just one.  Spread one side of 3 of the rounds with the spread you choose to use.
  • Arrange some thinly sliced white onion on each of the 3 rounds.  Don't over do on the onion.  Sprinkle some salt. Top it with another plain round.
  • Apply mayonnaise around the edges of the sandwiches.  Roll these into finely chopped parsley.
  • Serve it with tea.
