Crunchy Green Salad with Basil Vinaigrette Dressing



This salad makes eating greens a lot more fun!  

This is recipe 18 of 30:)

For the salad:

Mixed greens - 3 cups
Cherry tomatoes - 12
Feta cheese - 2 tablespoons, crumbled
Walnuts - 1/4 cup

For the dressing:

Olive oil - 1/2 cup
Balsamic vinegar - 2 tablespoons
Basil - 5-6 leaves
Garlic - 2 cloves
Parmesan cheese - 1/2 tablespoon
Salt - to taste
Pepper - to taste
Dried oregano (optional) - 1/2 teaspoon
  • Roast garlic using a few drops of oil.
  • In a blender, combine basil, roasted garlic, parmesan cheese, vinegar, salt, and pepper.  Gradually add olive oil and blend it. Add oregano.
  • Combine all the greens.  Top it with walnut and feta cheese.  Add the dressing prepared above.  The extra dressing can be saved in the refrigerator for future use.
