Salsa Verde


A quick, tangy salsa - my favorite!

Recipe:

Tomatillos - 1 lbs.
Jalapeno - 4
Onion - 1 (medium sized)
Garlic - 4 cloves
Cilantro - 1 cup
Salt - to taste
Olive oil - 1 tablespoon
  • Remove the husks from tomatillos.  Heat water and soak the tomatillos for about 5-10 minutes to remove the sticky surface.
  • Heat oven at 350 degrees Fahrenheit.  Brush the tomatillos, jalapenos, onion cut into big pieces, and garlic cloves with olive oil.  Place it in the toaster pan.  Roast it for about 20-25 minutes until the jalapenos are charred and the onion looks transparent.  The tomatillos will change its color from green to yellowish. Turn the vegetables around while being roasted such that surfaces from all the sides get roasted. 
  • Let it cool down.  Blend it in a blender by adding jalapenos, garlic, onion, tomatillos, cilantro and salt in that order.
Enjoy with nachos!
