Parsley Walnut Salad


This crunchy, crispy, flavorful, healthy salad can be ready in a couple of minutes, and will be cone quickly too!

Recipe:

Italian Parsley - 1/2 bunch, chopped
Curly Parsley - 1/2 bunch, chopped
Mint - 3-4 sprigs, chopped
Cherry tomatoes - about 8 to 10
Walnuts - 1/2 cup
Olive oil
Lemon juice
Salt - to taste
Black pepper - 1/4 teaspoon
Parmesan Cheese (optional) - 1 tablespoon, freshly grated
  • Whisk olive oil, lemon juice, salt and freshly ground black pepper. Keep it aside.
  • Dry roast the walnuts.
  • Mix all the greens, cherry tomatoes (can be cut into halves, if you prefer)
  • Add the walnuts, sprinkle parmesan cheese on top.
  • Serve with the prepared dressing on the side.
