Carrot Bulgar Salad and Grand Finale'


This salad is very crunchy, colorful, healthy, and refreshing. It's quite quick to put together as well.

Recipe: 

Carrots - 3-4, medium sized
Bulgar - 1/2 cup
Parsley - 1/2 - 1 cup, chopped

For Dressing:

Olive oil - 3 tablespoons
Lemon juice - 3 tablespoons
Salt - to taste
Black pepper powder - 1/2 teaspoon, freshly ground

  • Put bulgar in a bowl.  Boil 1 cup water. Can add a very small salt to the water (optional)Pour it over the bulgar.  Let it sit for around half an hour.  The bulgar will absorb all the water.  Fluff it with a fork, when ready to use the bulgar.
  • Peel and grate the carrots.  Chop parsley.  
  • Make dressing by whisking all the ingredients mentioned under dressing.
  • Put together bulgar, carrots, parsley.  Serve with the dressing on the side.
